Achiote is not your typical Ecuadorian restaurant. It does include some standard Andean items on the menu, like roasted guinea pig, but their speciality is reinventing old-time favorites adding a gourmet twist. One of the dishes that stands out the most is the ceviche. Although ceviche is a favorite of coastal areas in Latin America, at Achiote they reinvented this dish. They present chicken ceviche (not just the common fish one) and use other juices to marinate the meats, going beyond the usual lemon and lime. Passion fruit juice, for example, adds a new exotic flavor to ceviche, beautifully sided with chocolate infused rice and crispy fried plantains and corn.
