Purple taste explosion

Here you see mashed purple sweet potatoes. There is NO artificial coloring here. These potatoes are indigenous to, and grow only on, Easter Island. They were DELICIOUS, and I must say, quite a sight.

we have purple yams in the Philippines as well. The indigenous term for them is "ube", and they are also naturally a very vibrant purple. When cooked, it develops a very soft texture so finds its way into a lot of desserts.
