Paris's Food Truck Pioneer: Le Camion Qui Fume

Wheeled out just over a year ago, Le Camion Qui Fume* is responsible for pioneering the food truck movement in Paris. In a city where burgers of all forms and quality have largely become ubiquitous, it was going to take something special to make Kristin Frederick's burgers buzz-worthy. The Los Angeles native and Ferrandi graduate experienced quite an ordeal to land the necessary permits for operation but once she did, all that remained was a way to inform hungry urbanites of the truck's daily location.

Following in the footsteps of successful food trucks in the States with a prominent social media presence, Kristin went straight to Twitter and Facebook in addition to her website to announce truck locations and scheduling changes. That's part of what got people talking, but full credit goes to the concept and the quality.

The beef is ground fresh each morning, the buns are of the bakery variety and the options on the menu are unlike any this city has seen before. My pick: the Campagne which comes topped with aged gruyère, caramelized onions and mushrooms and a side of hand cut, perfectly salted fries.

One caveat: even with a truck upgrade and a year under their belts, wait times still approach 45 minutes to an hour. Some question if anything, let alone a burger, is worth the wait but as an expat, nothing cures a bout of homesickness better than this juicy and wonderfully messy sandwich.
