Cheese Bar is the offshoot of Poncelet, arguably Madrid’s best cheese shop (Calle Argensola, 27). Opened in 2010, the airy restaurant features a green wall, an upstairs library, two bars, and, of course, the best cheeses in the city, both domestic and international. Diners can choose one of the pre-selected cheese plates or build their own, and thorough menus include information on how to properly taste and fully appreciate the cheeses. Also on the menu are fondues, raclettes, and a host of other tasty dishes, both with and without cheese. There’s also an extensive wine list, and knowledgeable waiters are more than happy to suggest pairings.
