Yams are a Vanuatu food staple. In Mele village, the largest village outside Port Vila on the main island of Efate, yams can be found drying next to most houses. They are often cooked underground in earth ovens, which are lined with hot rocks. The food is then dug up when cooked. This style of island BBQ found throughout the Pacific islands.
