
Chef Allen's Chocolate Tea
Thanks to all of the sampling options, I reached the cooking demonstration a few minutes late. I may not have gotten a chair, but I certainly had my own sample of Chef Allen's awesome chocolate tea. With a nice explanation of how chocolate is made (and as shown, chocolate sticks) and a brief history of St. Lucia, we were given this delightful "chocolate tea."
8 oz chocolate stick (or unsweetened bitter chocolate), 1 tbsp lime zest, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/8 tsp mace, 1/8 tsp cayenne, 3 cups milk, 1 whole bay leaf, 2 whole star anise, 1 whole vanilla bean, 1 cup sugar, 2 tbsp flour.
Step 1: Combine chocolate, zest, cinnamon, nutmeg, mace, & cayenne.
Step 2: Warm milk in small saucepan. Add bay leaf, star anise, vanilla bean, & sugar. Bring to simmer and whisk in chocolate mixture. Sprinkle flour over simmering mixture and whisk well to prevent lumping. Simmer for 20-25 min until slightly thickened and rich.

I'm hoping to go to St Lucia either this spring or fall. Can you give me any tips on where to stay? I'd like a boutique hotel experience.
I've only been to St. Lucia once and opted to rent a villa vs stay at a hotel or resort. If I was to stay at one of their hotels, I'd opt for The Ladera or perhaps the one that they spoke of at the demonstration, Jade Mountain. AFAR recently spoke of The Hotel Chocolat which also looks great. I've been to the Caribbean so many times and have a number of friends there that make the experience more than just a memory. If you are planning on going this spring, however, look into the Jazz Festival (in May) that keeps the place lively. Many of my friends go to either enjoy or actually participate in the event. I'm hoping to make it one of these days when my job/school does not interfere.
Thanks, Christina. A villa actually sounds even more along the lines of what I really want frankly- bank account allowing… Can you tell me about where you stayed or other villas that you've discovered? There will be just two of us on the trip.
I stayed at Tuxedo Villas and MJI Villas. I ended up at two different spots because of a flight cancellation. I was there years ago (I spend most of my time in Barbados) so I'm not sure how these places are today vs back then. I will ask a few friends, however, and see if they can make better recommendations. Give me a few days:)
