Yet another treat to try in Rabat's souk is cactus fruit, which you will have no trouble finding if you wander for a little while. Morocco's deserts are brimming with cacti, and these sweet, slightly tangy fruits are harvested and brought in fresh every day. For half a dirham the vendor will peal the fruit (which is a relief, because it can take you days to pick out all of the tiny needles in your hands if you handle one yourself) and feed to to you right there. The first time I tried one I was surprised by the seeds, which are big and black, and can sometimes interrupt the pleasure of the soft meat of the fruit. The seeds are edible, but most people prefer to spit them out.
