Shopping in local farmers' markets and produce stands is one of the most fascinating aspects of travel. The fruit selection, most notably, is usually quite different than what you might find back home.

I stumbled upon these shockingly pink Pitaya - or dragon fruit - amongst the eggplant and pineapples at a stand in Nicaragua. And, while their slightly bland flavor might not be for everyone, the wonder at their discovery was enough to excite the palate.

After all -- experimentation is the heart of travel!
